Red Lentil Stew

4 Tbsp olive oil

5 cloves garlic

3/4 tsp sea salt

1 Tbsp lemon juice (may be omitted)

2 1/2 cups water

1 cup red lentils rinsed and drained

1 large tomato

heat oil in skillet, saute garlic and then tomatoes until a paste forms. Add lentils and water and bring to a boil.  Allow to simmer for 30 minutes. Add lemon and salt and serve over basmati rice.
