8-10 eggs
2-3 cups assorted chopped veggies and herbs
1/2 cup cheese
2 T water
1 1/2 tsp. salt
1/2 tsp. pepper
2 T olive oil
Preheat oven to 375*
Whisk eggs in bowl. Stir in half the cheese the water, salt and pepper with the eggs. Heat olive oil in cast iron skillet and add veggies and herbs and cook until tender. Pour egg mixture into skillet ans stir until half-cooked. Add the other half of the cheese to the top and spread on top. Place in the oven for 15 minutes.
Serves 6-8
