Crispy Pecans are great all year round and Holiday Pecans are especially tasty during the holiday season. Pecans are full of healthy fats and are a great alternative to peanuts.
You can make your own Crispy Pecans by purchasing raw pecans and soaking them in water and sea salt overnight. Then, in the morning strain them and roast them in the oven until dry and crispy. When the pecans have cooled you can store them in the refrigerator. You could also purchase already roasted pecan halves.
4 cups crispy pecans
3 egg whites
pinch of sea salt
1/2 cup of real maple syrup
1 Tablespoon vanilla extract
Beat eggs whites with sea salt until stiff. Slowly beat in the maple syrup and vanilla. Fold in pecans until well coated. Spread on 2 buttered, stainless steel baking pans and place in oven set low @ 150 for several hours and until the egg whites harden. Store in an airtight container in the refrigerator.
